Slow Cooker Overnight Breakfast Casserole



Prep Time 35 minutes
Cook Time 7 hrs
Serves 8

Ingredients:


  • 2 packages Johnsonville sausage links
  • 1 package refrigerated Simply Potatoes Hashbrowns
  • 1 cup chopped green onions 
  • 1 red bell pepper, chopped
  • 1/4 cup fresh cilantro
  • 1 1/2 cup shredded cheddar cheese
  • 12 eggs
  • 1 cup milk
  • 1/2 tsp salt
  • 1/8 tsp black pepper


Directions:

  1. Cook sausage according to package directions; cut into 1/4 inch slices; set aside.
  2. Combine green onions, red pepper,  & cilantro; set aside.  Spray slow cooker with cooking spray. Layer 1/3 of the hash browns, sausage, green onion mixture & cheese into crockpot. Repeat layers twice.
  3. In a bowl beat the eggs, milk, salt & pepper; pour over layered ingredients.
    Cook on low for 7-8 hours
