Hearty Chicken, with Sweet Potatoes & Apples

The cool Autumn days and nights are FINALLY here 🙌with that being said this is a dish that is perfect for Autumn. I made it this evening and it made the apartment smell so good. This is the perfect Autumn dinner that is simple to prep and make. Originally this recipe is from Beachbody, but I have made some alterations to it to make it my own. I will highlight my additions in case you choose to cook it the original way.

Prep Time: 10 min.
Cooking Time: 13 min.
Yield: 4 servings
Ingredients:
  • Cooking spray
  • 3 tsp. olive oil, divided use
  • 1 medium onion, chopped
  • 2 medium tart cooking apples (like Granny Smith or pippin, Gala), peeled, cored, finely chopped
  • 2 cups cubed baked sweet potato, cut into cubes (2 sweet potatoes 🍠 cut into bite size chunks.)
  • ¼ cup raisins
  • 8 oz cooked chicken breast, boneless, skinless, chopped (3 chicken breast, cut in half) 
  • 1 tsp. chopped fresh sage
  • 1/4 tsp Italian seasoning
  • ¼ tsp. sea salt
  • ¼ tsp. ground black pepper
  • ¼ tsp. paprika
  • 1 chicken bouillion cube
  • 1/2 cup water
  • Cinnamon, pumpkin pie spice, cardamom, nutmeg, cloves

Preparation:

1. Heat 1½ tsp. oil in a large nonstick skillet over medium-high heat.
2. Add onion and apples; cook, stirring frequently, for 6 to 7 minutes, or until mixture begins to brown. Place in a large bowl.
3. Add potato, raisins, chicken, sage, salt, pepper, and paprika; mix well.
4. Heat remaining 1½ tsp. oil in skillet over medium heat.
5. Add apple mixture, pat into an even layer in pan; cook, without stirring, for 2 minutes.
6. Stir gently; cook an additional 2 minutes, or until it begins to brown. Serve immediately.
Preparation Edited

  1. Spray a casserole dish with cooking spray. Add meat to the bottom of the dish. Top with dry seasonings (Italian,  black pepper, sea salt) add the bouillion cube with 1/2 cup.of water. Allow to cook.at 350° for 60 minutes. Check to ensure the chicken is cooked through.
  2.  Add any remaining sweet potato to a casserole dish and combine with the apple and cinnamon, pumpkin pie spice, nutmeg, and cloves. Add raisins and place in the oven for about 60 minutes.
  3. Take out of the oven and enjoy while warm. If you want you can serve this with a side vegetable and bread.
