Overnight Banana French Toast

I have some bananas that need to be used up so this is the perfect way to experiment with a new recipe for Sunday brunch with friends. Right now simple recipes are required till I get to feeling better. Who doesn't love French toast?


Ingredients:

  • 1/2 cup milk
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla
  • 2 medium-sized bananas
  • 3/4 French bread loaf, torn into pieces
  • 8 eggs
  • 1 cup milk
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
Directions 

  1. Combine milk, butter, and brown sugar in a sauce pan until melted.
  2. Bring to a boil and whisk continually until it starts to thicken. When it has thickened, remove from heat and stir in salt and vanilla.
  3. Pour 1/2 of the sauce in the bottom a 9x13 glass dish.
  4. Put a layer of banana slices on top of the sauce.
  5. Layer the torn up french bread on top of the bananas.
  6. Pour the remaining sauce over the top of the bread.
  7. In a separate bowl, whisk together eggs, milk, cinnamon, nutmeg, and vanilla.
  8. Pour over the french bread.
  9. Add almond slices on top.
  10. Cover with tinfoil and put in the refrigerator overnight.
  11. Baked at 375 for 35 minutes.
