A Healthy Take on Pizza

I made this dinner tonight with friends & it was a hit so I hope you all like it as well.

Ingredients:
  • fresh spinach
  • onion
  • mushrooms
  • cherry/grape tomatoes
  • pineapple 
  • turkey pepperoni
  • whole wheat english muffins
  • italian blend cheese
  • mango peach salsa


Directions:
  1. In a large pan saute the mushrooms and onion; then add the spinach and saute until it is cooked. 
  2. Preheat the oven to broil
  3. Slice the english muffins and place on a cookie sheet; place one spoonful of mango peach salsa 
  4. When the veggies are finished cooking add the veggies to the pizza
  5. top with three pepperonis, sprinkle cheese
  6. place in the oven that is on broil. It took less than a minute due to the broiler being heated.


  • You can serve it with pineapple and cherry tomatoes if you like or whatever side dish you choose.
