Butternut Squash Soup with Chicken Sausage
Ingredients:
- 1 tbsp olive oil
- 12 oz cooked chicken apple sausage (cut into 1/2 inch pieces)
- 4 cups cubed peeled butternut squash
- 3 medium carrots (chopped)
- 1/2 an onion (chopped)
- 1 stalk of celery (chopped)
- 2 1/2 cups chicken broth
- ground pepper to taste
- 1/2 cup parsley
Directions:
- Heat 1 tbsp olive oil in a pan over medium heat. Add sausage and cook, until browned for about 4 minutes. Transfer to a bowl using the slotted spoon. Add the squash, carrots, celery, onion, chicken broth to the pot. Cover & bring to a simmer, then reduce heat to low & continue to simmer until the vegetables are tender, about 15 minutes.
