Green Latkes

I wanted to try a healthier take on latkes that was made with veggies and was not deep fried. I found this recipe & tried it out and it was delicious.

 Ingredients: 
  • 2 medium zucchinis
  • 1 large potato
  • 1 small onion OR you can buy fresh onion that is chopped from the store
  • 3 tbsp matzah or flour
  • 2 eggs- I used cage free brown eggs
  • 1/2 tsp salt/soy sauce-I skipped this because salt is already in the food.
  • 1/2 tsp pepper, garlic powder, italian seasoning, rotisserie chicken spice (Mrs. Dash)

 Directions:
  1. Grate zucchini and potato. Remove excess water (in a dish towel or cheesecloh and squeeze out moisture) 
  2. Beat the eggs and add one at a time, mixing well
  3. Add matzoh meal or flour and baking powder, add spices & mix well.
  4. Instead of frying in oil I chose to bake them at 350 degrees until they were golden brown.
