Veggie Nachos

Serves: 4

Ingredients:


  • 3 oz baked tortilla chips
  • 1/2 c. mild salsa
  • 3 oz reduced sodium black beans, rinsed and drained
  • 4 Weight Watchers jalapeno string cheese sticks, finely chopped
  • 1/2 avocado, peeled and diced
  • 1/2 c. shredded romaine lettuce
Directions:

  1. Preheat oven to 425 degrees. Coat a large baking sheet with non-stick cooking spray.
  2. Arrange tortilla chips in single layer on pan. Spoon salsa evenly over chips. Sprinkle with black beans and cheese.
  3. Bake 10 minutes or until cheese melts. Sprinkle with avocado and shredded lettuce.
