I had some leftover strawberries and bananas from Christmas that I didn't want to ruin or throw away; so I went on to Pinterest of course to try to find a way to use it with ingredients that I had around the apartment. The result was strawberry banana bread; it looks delicious and it smells oh so good. Warning: don't make this if you are fasting because it can be so tempting. My friends and I were good though, we were tempted but held off. In a little bit we get to try this new recipe.
Ingredients:
- 4 very ripe bananas
- 1/3 cup melted butter
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1 egg, lightly beaten
- 1 tsp vanilla
- 1 tsp baking soda
- Pinch of salt
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 cup diced fresh strawberries
Directions:
- Preheat oven to 350 degrees.
- Mash bananas with a potato masher or fork.
- In a large bowl, mix butter into the mashed banana.
- Mix in the sugars, egg, and vanilla.
- Sprinkle the baking soda and salt over the mixture and mix in. Add the flours and mix to combine. Gently fold in the strawberries.
- Pour mixture into a buttered 4×8 inch loaf pan.
- Bake for one hour or until cooked- it took mine an extra 15 minutes. Be sure to check the middle of the bread.
- Cool for 20 minutes, remove from pan and slice and serve
