Chicken Vegetable Stir Fry
This recipe is a stem off of a veggie stir fry recipe from the 3 Day Refresh.
Ingredients:
- 1/2 tsp olive oil
- 1/2 clove of garlic
- 1 bag of steamable edamame & green beans
- *Vegetables of your choice, I chose: kale, zucchini, yellow squash, white onion
*You can use any of your favorite vegetables for this
- black pepper and sea salt to taste
- Optional: 2 tbsp organic vegetable broth
- Boneless skinless chicken breasts
- Jasmine rice
Directions:
- Bake chicken at 350 degrees until cooked-season to your liking.
- Heat oil in a medium skillet over medium heat; add garlic and ginger.
- Cook; stirring frequently, for 1-2 minutes or until fragrant.
- Add the vegetables of your choice, and broth.
- Cook for 5-7 minutes, or until vegetables are tender and crisp.
- Cook rice according to the directions on the box.
