Strawberry Banana Bread

I had some leftover strawberries and bananas from Christmas that I didn't want to ruin or throw away; so I went on to Pinterest of course to try to find a way to use it with ingredients that I had around the apartment. The result was strawberry banana bread; it looks delicious and it smells oh so good. Warning: don't make this if you are fasting because it can be so tempting. My friends and I were good though, we were tempted but held off. In a little bit we get to try this new recipe.


Ingredients:
  • 4 very ripe bananas
  • 1/3 cup melted butter
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 egg, lightly beaten
  • 1 tsp vanilla
  • 1 tsp baking soda
  • Pinch of salt
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 cup diced fresh strawberries
Directions:
  1. Preheat oven to 350 degrees. 
  2. Mash bananas with a potato masher or fork. 
  3. In a large bowl, mix butter into the mashed banana. 
  4. Mix in the sugars, egg, and vanilla. 
  5. Sprinkle the baking soda and salt over the mixture and mix in. Add the flours and mix to combine. Gently fold in the strawberries. 
  6. Pour mixture into a buttered 4×8 inch loaf pan.
  7. Bake for one hour or until cooked- it took mine an extra 15 minutes. Be sure to check the middle of the bread.
  8. Cool for 20 minutes, remove from pan and slice and serve
