Spiced Chicken with Grilled Peach Salsa

I was browsing through mynCooking Light magazines this weekend and found this recipe. It looked pretty simple and it is healthy so why not try it out? This is the perfect recipe to enjoy some of the amazing Summer produce that are available at the grocery store.

Ingredients:


  • *1 1/2 tsp cumin seeds, fennel seeds, coriander seeds
  • 1/4 cup lime juice
  • 4 tsps honey
  • 3/4 tsp sea salt
  • 1/2 tsp black pepper
  • 4 boneless skinless chicken breasts
  • Cooking spray
  • 3 peaches, pitted & quartered
  • 1/2 cup chopped cilantro
  • 1 tbsp olive oil
  • 2 green onions, chopped

*for spices I used 1 tsp. garlic powder, sesame seeds, Italian seasoning, ground cumin, & chili powder for a little but of a kick.

Directions:


  1. Spray baking pan with cooking spray, add olive oil
  2. Season chicken breasts with the first four ingredients or with the * ingredients. Place the chicken in the pan.
  3. Saute the onion and than add to the top of the chicken
  4. Cook chicken till it is completely cooked 
  5. To grill the peaches: grill the peaches for 3 minutes on each side; turn once to mark the cut sides. Chop peaches on a cutting board and place in a bowl with the juices. Add 1 tsp cinnamon & pumpkin spice to the fruit mix. Add 2 tbsps lime juice, 2 tsps honey.
  6. Add the peach mixture to the top of the chicken (I placed the juice over the chicken for extra flavor.)
  7. Serve with a vegetable of your choice & a side

For my sides I made a cucumber tomato salad & combined it with a Knorr Garlic & Herb rice side.
