Chicken Enchiladas

Mexican food is by far one of my favorite cuisines. I had seen a chicken enchilada recipe that was 21 Day Fix approved and wanted to try it out just to see how it would be. I was a little nervous as I sat down with friends to enjoy the dish. To all our surprise it was delicious 😋


Ingredients:

Boneless skinless chicken strips
Gluten free corn tortillas
Salsa
1 can diced tomatoes (unsalted)
1/2 red onion
1 can enchilada sauce
Mexican shredded cheese
21 Day Fix Southwestern Mix


Directions:

Preheat oven to 350°
While oven is heating season chicken with the 21 Day Fix southwestern mix.
Bake in the oven for 20 minutes or til done.
In a medium pan add 1 tbsp olive oil and red onion; saute and than add tomato. Allow to cook down for about 10 minutes.
Microwave corn tortillas for 30 seconds
Add chicken, cheese, tomato and onion to the tortilla and roll it up.
Place enchiladas in a sprayed baking dish
Top with enchilada sauce and cheese.
Bake for 10-15 minutes or until cheese is melted. Serve while warm
