Crispy Parmesan Zucchini Fries




Ingredients:

  • 2 medium zucchini
  • 3/4 cup grated parmesan cheese or fresh shredded
  • 1 large egg
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper



Directions:

  1. Preheat the oven to 425 degrees, place foil on baking sheet and lightly spray with cooking spray
  2. Cut zucchini in half lengthwise four times. Then cut the strips crosswise.
  3. In one bowl combine the egg and a second bowl for the cheese, pepper, and garlic.
  4. Dip the squash into the egg mixture, remove the excess mixture, press into the cheese mixture, coating both sides. Place the fries on to the prepared baking sheet.
  5. Bake in the oven for 15-20 minutes, flipping the fries, and rotating the pan halfway through, until golden and crispy.
