Turkey Leftover Casserole

With Thanksgiving being today, we all know there will be lots of leftovers which makes it the perfect time to try out recipes that use up all that Thanksgiving food.

Ingredients:


  • 2 1/2 cups of prepared mashed potatoes
  • 2 cups cooked, shredded turkey
  • 1 (12 oz.) jar of turkey gravy
  • 1 cup of prepared stuffing
  • salt and pepper to taste


Directions:


  1. Preheat oven to 350 degrees
  2. Place mashed potatoes into a 2 quart casserole dish, sprayed with non-stick cooking spray.
  3. Combine turkey and gravy in a large skillet and bring to a simmer, stirring occasionally.
  4. Remove from heat and stirring in stuffing until thoroughly combined.
  5. Add salt & pepper to taste, if desired.
  6. Spoon turkey mixture on top of potatoes and spread evenly.
  7. Cover and bake for 25-30 minutes or until thoroughly cooked.
