Black Eyed Pea Soup



Ingredients:
  • 2 carrots, peel the skin off
  • 2 cups of chicken broth
  • 2 cups of beef broth
  • 1/2 a medium sweet onion
  • 1 can of spinach, drained
  • 1 can black-eyed peas, drained and rinsed
  • 1 tbsp coconut oil
  • 1 can of diced tomatoes with the juice
  • 1 can of stewed tomatoes
  • 1 package of Montreal Steak beef sausage


Directions:
  1. In a medium skillet add coconut oil. Add the cut carrots and onion & saute til tender.
  2. Add the sausage to the skillet with the carrots and onion to allow it to warm.
  3. Add the chicken and beef broth to a large pot.
  4. Add in the tomatoes, black-eyed peas and let it come to a boil
  5. Cook for an hour to two hours and let it sit on warm til ready to serve.
  6. Serve with cornbread
