Classic Lasagna

My friends and I are a fan of this recipe which can be turned into a classic meat sauce lasagna or a vegetable lasagna with red sauce. Either way this recipe is a favorite. My friends have said that it is better than the frozen kind we occasionally buy, which makes me feel so good. 


For the sauce:
  • 1 lb of either ground turkey or ground beef, cooked
  • 1 can of Italian diced tomatoes, with the juice
  • 1 can of diced tomatoes, no salt added
  • 1 can of tomato paste
  • 1 bell pepper, chopped
  • 1 sweet onion, chopped
  • 1 can of spaghetti sauce
Filling:
  • 1 bag of Italian cheese
  • 2 eggs
  • 2 cups ricotta cheese
Other ingredients
  • 1 box of lasagna noodles
  • parmesan for topping
  • coconut oil
  • cooking spray

Directions:
  1. In a skillet saute onions and bell pepper in a tbsp of coconut oil. After sauteed set them aside in a bowl. Add the meat to the skillet and cook until the meat is done. Add in the peppers, onion, and tomatoes and allow it to come to a boil. Turn on low heat and cover allowing the flavors to combine. 
  2. In a medium bowl combine the ricotta cheese, eggs, and Italian cheese. Stir to combine all ingredients. 
  3. Spray a baking dish with cooking spray, add some sauce to the bottom of the dish and lay the noodles on top of the sauce.
  4. Add the ricotta cheese mixture over the noodles and then layer with the sauce.
  5. Continue layering and when finished drizzle with Parmesan cheese.
