Sweet Potato Soup & Mixed Green Salad


Nothing is better on a cold day than a hot bowl of soup. A friend of mine found this recipe for me in our local newspaper during Thanksgiving. We were unable to try it during the holidays but winter makes it possible to enjoy this recipe. This would also be a great recipe for getting rid of Thanksgiving leftovers. 

Ingredients:

  • 1 cup roasted sweet potatoes
  • 1 cup non-fat milk
  • 1 cup of chicken or vegetable broth
  • 1 dash of nutmeg

Salad:

  • 4 cups of mixed greens
  • 8 oz. leftover turkey, chopped
  • 3 tbsp Italian dressing
Directions: 


  1. Combine the sweet potatoes, milk, broth, and nutmeg in a blender and process until smooth.
  2. Pour into a medium saucepan and simmer over low heat for 10-15 minutes.
  3. Serve with mixed salad
