Creamy Tuscan Garlic Tortellini Soup





Ingredients:

  • t tbsp butter, or coconut oil
  • 1 small onion, diced
  • 3 cloves of garlic
  • 4 cups chicken broth
  • 1 (28 oz.) can of diced tomatoes
  • 1 (15 oz.) can of white beans
  • 1 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1 tbsp Italian seasoning
  • 1 tsp sea salt
  • 1/4 tsp black pepper
  • 2 cups cooked chicken, chopped
  • 9 oz tortellini
  • 2 cups spinach

Directions:

  1. Bake chicken breasts in the oven @350°
  2. In a large pot add the coconut oil or butter and add the onion, and garlic to the pot to saute. Add the chicken broth, tomatoes, beans, heavy cream, parmesan cheese, italian seasoning, salt and pepper. Bring to a simmer. 
  3. Add the tortellini, spinach, chicken to the pot and allow to cook on low heat for ten minutes to thicken and to allow the tortellini to cook.
