Vegetable Beef Soup

With the Winter evenings we have been having I decided to experiment with a new vegetable beef soup recipe. It is simple to make and was a hit with my friends who ate every bit of it.



Ingredients:

  • 2 bay leaves
  • 1 sweet onion, diced
  • red potatoes, quartered
  • 1 can of tomatoes, undrained
  • 1 can of beef broth
  • 1 bag of frozen soup vegetables
  • salt & pepper to taste
  • 1 pound of ground beef, cooked and drained


Directions:
  1. Cut up red potatoes and place at the bottom of the crock pot
  2. Add in frozen mixed vegetables or canned veggies. I used a frozen soup vegetable medley from Harris Teeter. You can also add other vegetables that you or your family enjoy!!!
  3. Add in the can of tomatoes, broth, and stir to combine
  4. In a medium pan cook the hamburger til brown
  5. Add the meat to the crock pot and allow it to cook on low for 8 hours.
