Sunny Spinach Pie


While North Carolina wasn't in the direct path of the Eclipse yesterday my friends and I enjoyed seeing what we could outside and also watched the news and saw some of the photos coming in from various parts of the seven states that got the full eclipse.



Ingredients:

  • 12 oz of boiled chopped spinach
  • 12 oz ricotta cheese
  • 1 egg
  • 3 oz of grated parmesan or Italian cheese
  • salt and pepper
  • bread crumbs
  • Spices: garlic powder, Italian seasoning


Instructions:

  1. Line a baking sheet or circle pan with aluminum foil and spray with cooking spray
  2. Place one of the pie crusts onto the pan
  3. In a saucepan add the spinach and place some water in the pot to help it come to a boil.
  4. In the middle of the pie crust place, panko bread crumbs onto the pie crust.
  5. In a medium size, bowl add the spinach, ricotta, egg, salt, and pepper
  6. Top the panko covering with the cooked spinach mixture
  7. In the outer edges add some more panko. This is the outer ring, Top the outer ring with the spinach mixture. Top the spinach mixture with either the parmesan or Italian cheese.
  8. Add the remaining pie crust over the spinach mixture
  9. Place a bowl in the center of the pie crust to make the shape of the sun. Fold the outer sides of the pie and mash with a fork. 
  10. From the bowl slice halfway down but not all the way.
  11. Fold the strips together to form the outer bans of the sun.
  12. If desired, top the pie crust with garlic powder and Italian seasoning
  13. Bake in the oven at 350° for 30 minutes
