Pumpkin French Toast

The season of pumpkin spice and everything nice continues 😉 last night I came up with the idea of making a pumpkin French toast for brunch today and thanks to Pinterest I found the perfect one to try  out. It was a little sweet but still good and the smell of it while it cooked in the pan was heavenly.

Ingredients:

1/2 cup pumpkin purée
1/2 cup brown sugar
1 tbsp butter
4 eggs
3/4 cup milk
1 tsp vanilla, ginger, pumpkin pie spice, nutmeg
Whole wheat bread
Powdered sugar, syrup



1️⃣ In a medium size bowl add the eggs, milk, pumpkin, and spices. 2️⃣ Whisk everything together until firm. 3️⃣ Add 1 tbsp butter to a pan on medium high heat allow to melt. 4️⃣ Dip the bread into the pumpkin batter, place into the skillet and allow it to cook for 2-3 minutes and than flip over and let it cook on the other side. Serve and enjoy! 😉 we drizzled ours with powdered sugar and syrup. It was quite sweet, if you are not a fan of super sweet you can omit the powdered sugar or the syrup. I am going to try to play around with this recipe to figure out a less sweet approach.
