Black Bean Nachos

Yesterday was National Nacho Day, but today is Taco Tuesday.🌮 So, why not celebrate National nacho day on taco Tuesday? Thank you to Patrick from mexicanplease.com for this recipe idea. I can’t wait to try this out and see how my friends like it.


Ingredients:

  • 1 can of black beans
  • 1/2 onion, chopped
  • 2 garlic cloves OR 1 tbsp of minced garlic
  • 2 chipotles in adobo
  • 1 tbsp adobo sauce
  • 1/2 tsp salt, cumin, black pepper
  • 1/2 cupnof water or stock
  • Tortilla chips or homemade chips
  • Shredded cheese
  • OPTIONAL: cilantro, jalapeños, other nacho toppings of your choice


Directions:

1️⃣ chop 1/2 onion and add garlic to a pan and sauté in olive oil for 5-7 minutes or till the onion is translucent.
2️⃣ drain and rise one can of black beans
3️⃣ add black beans to the onion mixture, along with the chipotle in adobo and sauce. Also add salt, pepper, cumin, water, stock or broth.
4️⃣ simmer for a few minutes until heated through
5️⃣ combine the bean mixture into a blender or food processor
6️⃣ line the baking sheet with parchment paper or aluminum foil to help make sure clean up flows smoother. Spray the baking sheet and add the chips, drizzle with the onion and bean mixture, top with cheese.
7️⃣ bake in the oven at 400 degrees for 5-7 minutes until the cheese has melted and remove and take out of the oven and top with your favorite toppings.
