Ingredients:
- 2 cups quinoa flour
- 1 tsp baking soda
- 1/4 tsp salt
- 2/3 c coconut oil, melted & cooked
- 1 1/4 cups brown sugar
- 1 egg
- 1 egg yolk
- 2 tsp vanilla
- 1 cup chocolate chip cookies
- coarse sea salt, for sprinkling
Directions:
- Preheat oven to 350 degrees
- In large bowl whisk together the quinoa flour, baking soda & salt; set aside
- In a bowl beat coconut oil & brown sugar until smooth. Add in the egg, egg white, & vanilla; beat for 2 minutes or unril smooth & creamy.
- Add in flour; mix on low speed until combined, slowly fold in chocolate chips
- Roll dough into 2 in. balls and place on cookie sheet 2 in. apart. Bake 8-11 minutes or until edges are a golden brown.
- Remove from oven and let cool for 5 minutes on baking sheet. Transfer to cooling rack once the edges have hardened enough to move.
