Clean Eating Coconut Lime Chicken

Prep Time: 15 min
Total: 1 hour

Ingredients:

2 cups coconut milk
2 tbsp lime juice (or other citrus juice)
2 tbsp lime zest
2 tbsp raw honey
1 tsp minced garlic
1 tbsp fresh basil
1/2 tsp salt
1 tsp black pepper
boneless-skinless chicken breasts

Directions:

Preheat oven to 450 degrees
Whisk together all the ingredients (except chicken)
Toss chicken in mixture until coated
Spray baking dish or dutch oven  with cooking spray, place chicken
Bake unocovered for 30 minutes, or until chicken is done.

Prep Tip for best flavor: marinate the chicken in the mixture a day before cooking--refrigerate
