Yields: 4 servings
Ingredients:
- 4 salmon fillets
- 3 tbsp lemon juice
- 3 tbsp olive oil
- kosher salt
- 1 bunch of kale, ribs removed, leaves very thinly sliced (about 6 cups)
- 1 apple
- 3 tbsp almonds
- fresh ground pepper
- 4 whole wheat dinner rolls
Directions:
- bring the salmon to room temperature for 10 minutes before cooking
- Whisk together the lemon juice, 2 tbsp olive oil, & salt in a large bowl. Add the kale, toss to coat and let stand 10 min.
- While the kale stands, cut the apple into matchsticks. Add the apples, cheese, and almonds to the kale. Season with pepper and toss to mix together, set aside.
- Sprinkle the salmon with 1/2 tsp salt & pepper. Heat 1 tbsp oil in a large non-stick skillet over medium low-heat. Raise the heat to medium-high. Place the salmon, skin side up in the pan. Cook until golden brown on one side (app 4 min.) Turn the fish over with a spatula, & cook until it feels firm to the touch (app 3 min)
