Pan Seared Salmon with Kale & Apple Salad

Total time: 40 min.
Prep: 20 min
Cook:10 min
Yields: 4 servings

Ingredients:


  • 4 salmon fillets
  • 3 tbsp lemon juice
  • 3 tbsp olive oil
  • kosher salt
  • 1 bunch of kale, ribs removed, leaves very thinly sliced (about 6 cups)
  • 1 apple
  • 3 tbsp almonds
  • fresh ground pepper
  • 4 whole wheat dinner rolls


Directions:


  1. bring the salmon to room temperature for 10 minutes before cooking
  2. Whisk together the lemon juice, 2 tbsp olive oil, & salt in a large bowl. Add the kale, toss to coat and let stand 10 min.
  3. While the kale stands, cut the apple into matchsticks. Add the apples, cheese, and almonds to the kale. Season with pepper and toss to mix together, set aside.
  4. Sprinkle the salmon with 1/2 tsp salt & pepper. Heat 1 tbsp oil in a large non-stick skillet over medium low-heat. Raise the heat to medium-high. Place the salmon, skin side up in the pan. Cook until golden brown on one side (app 4 min.) Turn the fish over with a spatula, & cook until it feels firm to the touch (app 3 min)
