Hearty Beef & Butternut Squash Stew

Serves:6
Serving Size: 1 1/4 cup

Ingredients:


  • 1 tsp olive oil
  • 1 lb beef stew meat (boneless)
  • 1/2 onion \(chopped)
  • 1/2 green & red bell pepper
  • 4 cloves garlic (crushed)
  • 2 medium tomatoes (chopped)
  • 1 cup beef broth
  • 1 bay leaf
  • 1 tsp salt (skipped)
  • 1 tsp pepper
  • 2 cups cubed butternut squash
  • 1/4 c. parsley

Directions:


  1. Spray cooking pan with olive oil cooking spray, place beef in sauce ban. Cook until brown
  2. Saute onion, bell peppers--until onion is translucent
  3. Add garlic (cook for 1 minute)
  4. In a crock pot add tomatoes, broth, bay leaf, salt, pepper, squash, bell peppers, & onion
  5. Add meat to the crock pot--place in the bay leaf
  6. Cover and cook on low until vegetables are tender--about 4-5 hours.
