Serving Size: 1 1/4 cup
Ingredients:
- 1 tsp olive oil
- 1 lb beef stew meat (boneless)
- 1/2 onion \(chopped)
- 1/2 green & red bell pepper
- 4 cloves garlic (crushed)
- 2 medium tomatoes (chopped)
- 1 cup beef broth
- 1 bay leaf
- 1 tsp salt (skipped)
- 1 tsp pepper
- 2 cups cubed butternut squash
- 1/4 c. parsley
- Spray cooking pan with olive oil cooking spray, place beef in sauce ban. Cook until brown
- Saute onion, bell peppers--until onion is translucent
- Add garlic (cook for 1 minute)
- In a crock pot add tomatoes, broth, bay leaf, salt, pepper, squash, bell peppers, & onion
- Add meat to the crock pot--place in the bay leaf
- Cover and cook on low until vegetables are tender--about 4-5 hours.
