Happy Cinco De Mayo
Here is a healthy & clean recipe that you can make to enjoy for Cinco de Mayo.
Ingredients:
- 1 tbsp lime juice
- 1/2 tsp garlic, chopped
- 2 tsps fresh cilantro
- 1 1/2 tsp extra virgin olive oil
- 1/8 tsp black pepper
- 3 tilapia fillets
- 2 flour tortillas or wheat
- 1/2 cup lettuce, shredded
- 1/2 cup tomato, chopped
- 3 tbsp avocado
- 2 tbsp salsa
- 1/2 cup pineapple in water
Directions:
- Combine the juice, garlic, cilantro, oil and pepper in a shallow dish.
- Add fish coating with the marinade
- let sit in refrigerator for 15 minutes
- heat grill, oven or bake until fish us opaque or fish begins to flake
- Divide fish into portions and place evenly on tortillas
- Top with sides and serve with pineapple
