Fish Tacos

Happy Cinco De Mayo


Here is a healthy & clean recipe that you can make to enjoy for Cinco de Mayo. 

Ingredients:

  • 1 tbsp lime juice
  • 1/2 tsp garlic, chopped
  • 2 tsps fresh cilantro
  • 1 1/2 tsp extra virgin olive oil 
  • 1/8 tsp black pepper
  • 3 tilapia fillets
  • 2 flour tortillas or wheat
  • 1/2 cup lettuce, shredded
  • 1/2 cup tomato, chopped
  • 3 tbsp avocado
  • 2 tbsp salsa
  • 1/2 cup pineapple in water

Directions:

  1. Combine the juice, garlic, cilantro, oil and pepper in a shallow dish.
  2. Add fish coating with the marinade
  3. let sit in refrigerator for 15 minutes
  4. heat grill, oven or bake until fish us opaque or fish begins to flake
  5. Divide fish into portions and place evenly on tortillas
  6. Top with sides and serve with pineapple
  7. ENJOY
