Tomato Basil Salmon with Zucchini


Ingredients:


  • 1/3 cup canned crushed tomatoes with basil, do not drain the juice
  • 1 tsp capers
  • 1/2 clove of garlic, finely chopped
  • 2 salmon fillets 
  • nonstick cooking spray
  • 1 pinch sea salt (optional)
  • ground black pepper
  • 1 zucchini 
Directions:

Combine tomatoes, garlic, and capers in a small bowl and set aside
Season both sides of the salmon with pepper and salt if desired
heat medium skillet lightly coated with cooking spray over medium high heat.
Add salmon and cook for two minutes on each side
While the salmon is cooking wash the zucchini, cut into slices
Layer tomato over salmon in the skillet, cook covered for 5 minutes or until salmon is cooked 
through and flakes easily with a fork.
In a new pan or after cleaning the pan I cooked the zucchini and placed 1/3 of the tomato sauce with the zucchini and allowed it to cook for 5-10 min. Cook until the zucchini is tender. 
Serve and Enjoy
