Julia Child's Eggplant Pizza



If you like eggplant parmesean or are a fan of Italian food but want to try something healthier. You have got to try this delicious recipe from Julia Child's kitchen. It is delicious and super simple to make. Italian cuisine is one of my favorite cuisines. 
I hope you all enjoy this recipe.

Servings: 3-4

Ingredients:

  • 1 eggplant
  • 1 tbsp salt
  • 2 tbsp olive oil
  • 2 tsp dried italian seasoning
  • 10 large basil leaves (OPTIONAL)
  • 1/3 cup parmesean & mozzarella cheese
  • hot red pepper flakes (OPTIONAL)


Sauce Ingredients:

  • 2-3 tsp olive oil
  • 3 garlic cloves, very finely chopped
  • 1 can (14.5 oz.) petite diced tomatoes (I bought Italian w/ garlic)
  • 1/2 tsp dried italian seasoning
  • 1/4 tsp dried oregano


Instructions:

  1. Cut off both ends of the eggplant. Cut into 3/4 inch slices
  2. Place the slices on a double layer of paper towels and sprinkle both sides generously with salt.
  3. Let eggplant sit with the salt on it for about 30 minutes
  4. Preheat oven to 375 degrees 15 minutes into the eggplant sitting
  5. Heat 2-3 tbsp olive oil and saute the finely chopped garlic just until it become fragrant. 
  6. Add the tomatoes, Italian seasoning, and dried oregano and let the sauce cook at a low simmer until its thickened, breaking up the tomatoes as it cooks.
  7. Add water as needed , a few tablespoons at a time as the sauce cooks
  8. Keep it simmering on low heat until its needed for the eggplant slices.
  9. After 30 minutes, wipe the eggplant with paper towels removing the salt.
  10. Spray a baking sheet with non-stick spray, lay eggplant slices on top, brush the tops of the eggplant with olive oil, and sprinkle with dried italian seasoning
  11. Bake the eggplant about 25 minutes
  12. Remove eggplant from the oven, turn oven to broil
  13. Spread a few tablespoons of sauce over the eggplant slices, sprinkle with cheese and basil slices (if using)
  14. Put pizzas under the broiler until the cheese is melted (only took a few minutes tops)
  15. Serve hot with red pepper flakes, if desired or a side salad.
  16. ENJOY!
