21 Day Fix Inspired Pumpkin Muffins


Are you a pumpkin fan? It is that time of the year again. To celebrate the coming of Fall here is a healthy pumpkin muffin recipe that is healthy and will help you stay on track with nutrition. There is no guilt with this 21 Day Fix inspired recipe. I got this recipe from a 21 Day Fix recipe group.

What You Need-
  • 2 eggs
  • 1/4 cup canned pumpkin puree
  • 1 large banana
  • 1/2 cup natural peanut butter
  • 1/4 cup honey
  • 2 scoops of Vanilla Shakeology OR chocolate Shakeology (both taste great)
  • 1/2 tsp baking powder
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp sea salt

Directions-
  1. Preheat over to 350 and prepare 12 muffin cups with lining muffin paper and coating with Pam or use silicone cups.
  2. Place eggs, pumpkin, banana, peanut butter and honey in blender and blend for 30 sec.
  3. Add Shakeology, baking powder, pumpkin pie spice, and sea salt. Blend until smooth.
  4. Divide the batter among the 12 muffin cups
  5. Bake 18-20 minutes, or until golden brown and tester inserted into the center comes out clean. Let cool.
**optional** you can add 5 dark chocolate chips to each muffin if you wanted to change the recipe! They taste great both ways , however I prefer without the chocolate chips.
21 DAY FIX CONTAINERS (FOR 2 MUFFINS) 1/2 Red, 1/3 Purple, 1 tsp
IF YOU ADD THE CHOCOLATE CHIPS YOU WILL WANT TO MARK OFF 1 YELLOW CONTAINER PER 2 MUFFINS :)
