Parmesean & Spinach Orzo



Ingredients:


  • 1 cup orzo pasta
  • 1 tbsp olive oil
  • 2 cloves garlic, miced
  • 1 small onion, diced
  • 1 tbsp all purpose flour
  • 1 cup milk
  • 1 1/2 cups spinach
  • 1/2 cup parmesean cheese
  • salt and pepper to taste


Instructions:


  1. In a large pot of boiling water, cook pasta  according to package instructions; drain well
  2. Heat olive oil in a saucepan over medium heat. Add garlic and onion, and cook, stirring frequently, until onions have become translucent, about 2-3 minutes.
  3. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in milk, and cook, whisking constantly, until slightly thickened, about 3-4 minutes.
  4. Add spinach and cook until wilted, about 2-3 minutes. Stir in Parmesean until melted
  5. Add orzo and gently toss to combine. Season with salt and pepper to taste
  6. Serve and Enjoy!
