Ingredients:
- 2 carrots, peel the skin off
- 2 cups of chicken broth
- 2 cups of beef broth
- 1/2 a medium sweet onion
- 1 can of spinach, drained
- 1 can black-eyed peas, drained and rinsed
- 1 tbsp coconut oil
- 1 can of diced tomatoes with the juice
- 1 can of stewed tomatoes
- 1 package of Montreal Steak beef sausage
Directions:
- In a medium skillet add coconut oil. Add the cut carrots and onion & saute til tender.
- Add the sausage to the skillet with the carrots and onion to allow it to warm.
- Add the chicken and beef broth to a large pot.
- Add in the tomatoes, black-eyed peas and let it come to a boil
- Cook for an hour to two hours and let it sit on warm til ready to serve.
- Serve with cornbread
