For the sauce:
- 1 lb of either ground turkey or ground beef, cooked
- 1 can of Italian diced tomatoes, with the juice
- 1 can of diced tomatoes, no salt added
- 1 can of tomato paste
- 1 bell pepper, chopped
- 1 sweet onion, chopped
- 1 can of spaghetti sauce
Filling:
- 1 bag of Italian cheese
- 2 eggs
- 2 cups ricotta cheese
Other ingredients
- 1 box of lasagna noodles
- parmesan for topping
- coconut oil
- cooking spray
Directions:
- In a skillet saute onions and bell pepper in a tbsp of coconut oil. After sauteed set them aside in a bowl. Add the meat to the skillet and cook until the meat is done. Add in the peppers, onion, and tomatoes and allow it to come to a boil. Turn on low heat and cover allowing the flavors to combine.
- In a medium bowl combine the ricotta cheese, eggs, and Italian cheese. Stir to combine all ingredients.
- Spray a baking dish with cooking spray, add some sauce to the bottom of the dish and lay the noodles on top of the sauce.
- Add the ricotta cheese mixture over the noodles and then layer with the sauce.
- Continue layering and when finished drizzle with Parmesan cheese.
