Ingredients:
- 1 cup plain Greek yogurt
- 4 boneless pork chops
- 1 tsp lemon juice
- 1/2 cup flour
- 1 tsp oregano
- 1 tsp dried basil
- 1 tsp lemon pepper
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1 tsp kosher salt or Himalayan salt
- 1/2 tsp black pepper
- 1/4 cup coconut oil
- cooking spray
Directions:
- Place defrosted pork chops in an oven safe dish. In a medium bowl add the greek yogurt and sprinkle in the lemon juice and stir together. Use a brush and brush the lemon yogurt mixture over the pork on both sides. Sprinkle the seasonings over the top of the yogurt covered pork.
- Cover the dish with plastic wrap and place it in the fridge overnight.
- Add the flour to a Ziploc bag and add one pork chop at a time. Shake the flour mixture over the chop til it is coated.
- Preheat a large skillet and spray with cooking spray. Add the coconut oil and place the pork chops in the pan. (I cooked two at a time) Cook the pork 3-5 minutes on each side or til the pork is 145 degrees.
My friends and I topped the pork with cranberry sauce and chicken flavored rice for a simple side dish. The pork chops were tender and flavorful and the cranberry made the dish complete. If you don't like cranberry you can eat the pork chops as they are and there is still great flavor.
