This recipe reminds me of Thanksgiving, but also makes a perfect side dish for burger night.
Ingredients:
1 package of sweet potato patties (Food Lion has these in the lunchmeat section)
1/4 cup cranberries
1 tbsp cinnamon
1 tbsp sugar
1 tbsp coconut oil
1/4 cup pecans
Directions:
In a pot add the coconut oil; while the oil is melting spray a brownie pan with cooking spray. Add the sweet potatoes to the pan.
With a brush, spread the coconut oil over the sweet potatoes on both sides.
Top with the cinnamon, sugar, cranberries, and pecans.
Bake for 10-15 minutes at 350 degrees.
Serve while they are warm.
