Ingredients:
2 stalks of celery, chopped
1 onion, chopped
2 tbsp of coconut oil OR butter, melted
3 bell peppers
3 slices of provolone cheese
stew beef meat, cut up into pieces
Directions:
- Saute the celery, onion, and mushrooms in a tablespoon of coconut oil
- Remove the sauteed veggies and add the meat into the pan and allow it to cook
- Take the meat out and slice it on a cutting board into small strips
- Put the heat on low and add all the ingredients into the pan
- Add 1 tbsp of mayonnaise and stir the ingredients to combine
- Stuff the peppers with the meat and veggie mixture.
- Top the peppers with a slice of cheese and bake the peppers in the oven for 30 minutes at 350 degrees.
