Skinny Oatmeal Chocolate Chip Cookies

I am too close to reaching my first goal to splurge on unhealthy chocolate chip cookies, so I took to Pinterest to find a healthy alternative to a classic. It is super simple to make & I can't wait to try them once they come out of the oven.


To make this delicious treat you will need:

1 cup quick oats
3/4 cup whole wheat flour
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp kosher salt
2 tbsp butter, melted & cooled
1 tsp vanilla
1 large egg
1/2 cup honey
3/4 cup chocolate chips, leave out 1/2 cup of chips for final step

Preheat the oven to 325°
Line a baking sheet with parchment paper 
Pull out 2 medium bowls, one for wet ingredients, & one for dry ingredients.
In one bowl, whisk together the oats, flour, baking powder, cinnamon, and salt. 
Melt the butter in the other bowl. You don't have to melt it all the way. Let it cool slightly.
Whisk in the vanilla, egg, & honey
Add the wet ingredients to the dry ingredients & spoon the mixture till combined.
Combine 1/2  the chocolate in the dry mix & fold
Save 1/2 cup of chocolate chips, use a knife to chop the remaining chocolate.
Freeze for 15 minutes, take out & fold by hand to shape the dough into cookies.
Place on the prepared baking sheet 2 inches a part
Bake for 12-13 minutes, or till browned on the edges
Once removed from the oven , immediately press the remaining chips into the tops of the cookies.
Let cool & transfer to a cooling rack
