Vegetable Meatloafs


A friend had requested me to make meatloaf, so I decided to try out an experiment with a veggie meatloaf. It was pretty good, I would recommend using gravy for going over the turkey or to make sure that you have ketchup on the table to add over the top. It is a guilt free healthy dinner that you can enjoy with friends, family, or in celebrating a special occasion.




Ingredients


  • 1/2 carrot, shredded & cut
  • 1 green bell pepper,  sliced thinly
  • 1/2 yellow onion, chopped
  • 2 tbsp Worcestershire sauce
  • 1/2 Panko breadcrumbs
  • 2 eggs
  • Spices: garlic powder, celery salt, oregano, cumin, Italian seasoning, onion powder
  • 1/2 cup flax seeds


Directions


  1. Defrost 1 lb ground turkey, add to a bowl and add the vegetables, eggs, spices, and then combine the panko, Worcestershire sauce. You can either allow it to marinate in the fridge till the next day or you can place it in the oven and cook it at 350° for 30-60 minutes or until done.
