Southern Spiced French Toast with Bananas & Pecans

This is a recipe that came with my new workout program, Country Heat. I am.so excited to try this out, the picture makes it look absolutely delicious.


Ingredients:


  • 4 large eggs
  • 1/4 cup unsweetened almond milk
  • 1 tbsp pure maple syrup
  • 1 tsp pumpkin pie spice
  • 4 slices whole grain bread
  • 2 tsp coconut oil
  • 1 large banana
  • 1/2 cup chopped raw pecans, toasted


Directions


  1. Combine eggs, almond milk, maple syrup, pumpkin pie spice in a shallow pan; whisk to blend.
  2. Soak each slice of bread in egg mixture for 2 minutes, turning halfway.
  3. Heat oil in medium nonstick skillet over medium high heat.
  4. Add bread; cook for 2-3 minutes on each side, or until golden brown.
  5. Top each slice evenly with banana and pecans; serve immediately.
