Chicken Pot Pie

It is a cold night in North Carolina with winter weather supposedly heading our way. It was the perfect night to make this simple chicken pot pie recipe that was a hit with friends this evening.

Ingredients

3 boneless, skinless chicken breasts
Chicken spices: Thyme, Italian seasoning, sea salt, black pepper, garlic powder, and onion powder.
1 can cream of chicken soup
2 cups chicken broth
2 (5 count) cans of biscuits
1 bag frozen mixed vegetables

Directions

Preheat oven to 350°
Cut the fat off of the chicken, season with the spices and bake in the oven for 30-60 minutes in a Dutch oven.
Take out and cut the chicken into pieces
Top with a bag of uncooked frozen mixed vegetables and 2 cups of chicken broth and a can of cream of chicken soup. Stir everything together.
Finally, top with biscuits and allow to cook for an additional 30 minutes or until biscuits are golden. Take out of the oven.
Serve and Enjoy while it is hot!
