Stuffed Peppers

I enjoy being able to try out new recipes that are healthy and budget friendly. I was on Instagram this week and saw a fellow Instagram friend try out this recipe.It is simple to prep and cook. The prep and total cook time for this dish means that you can have it made and on the table in an hour. While I am in college simple recipes are the way to go.

Ingredients:

2 stalks of celery, chopped
1 onion, chopped
2 tbsp of coconut oil OR butter, melted
3 bell peppers
3 slices of provolone cheese
stew beef meat, cut up into pieces

Directions:

  1. Saute the celery, onion, and mushrooms in a tablespoon of coconut oil
  2. Remove the sauteed veggies and add the meat into the pan and allow it to cook
  3. Take the meat out and slice it on a cutting board into small strips
  4. Put the heat on low and add all the ingredients into the pan
  5. Add 1 tbsp of mayonnaise and stir the ingredients to combine
  6. Stuff the peppers with the meat and veggie mixture.
  7. Top the peppers with a slice of cheese and bake the peppers in the oven for 30 minutes at 350 degrees.
