Parmesan Chicken Pot Pie

I saw a recipe for Parmesan chicken and originally the dish was supposed to be paired as a main dish with sides. I made some changes to it to keep things simple. Even with the changes this recipe turned out to be quite good. It is a chicken dish that meets pot pie. It is a perfect dish for a cold winter day or a rainy day.



Ingredients needed:

4 chicken thighs, cut the fat and skin off
1 packet of Parmesan shake and bake
Seasonings: garlic and onion powder, Italian seasoning, black pepper & kosher salt 

After seasoning the chicken with the spices and shake and bake I covered the baking dish with plastic wrap and let it marinate overnight in the fridge. 
If you want the Parmesan chicken alone simply bake the chicken in the oven at 350 degrees for about an hour. In the end drizzle the chicken with Parmesan or five cheese Italian cheese. Allow it to cook til it is melted. 

To make the pot pie dish you will need the following ingredients:

2 cans of cream of chicken soup
1 package of Harris Teeter asparagus and corn vegetable mix

Mix the soup and veggies together with the chicken
Allow it to bake for 30-60 minutes until the chicken is thoroughly cooked
In the final stages top the chicken and veggie mixture with Italian cheese and allow it to bake for another 10-30 minutes. 
Serve the dish while warm and ENJOY!!!
