Homemade Tomato Soup

Nothing is better in cold weather than a hot bowl of soup on those cool Autumn days. This was a simple recipe that you can easily add to a slow cooker and it will be ready when you get home.



Ingredients:
2 cans of diced tomatoes
1 onion, diced
4 cloves of garlic, minced
2 cups vegetable broth
2 tbsp honey
1/2 tsp pepper & a pinch of salt
3 bay leaves
11/2 tsp dried oregano

Directions:

Chop up the onion and garlic and sauté in 3 tbsp olive oil
In a large pot add in the tomatoes, vegetable broth, honey, salt & pepper, and add in the oregano and bay leaves. Add in the onion and garlic and allow to cook on medium low heat for about 30 minutes.
Place the soup in a blender or food processor and purée till well combined. Add back to the pot to warm again.
Serve hot and is great with a hot grilled cheese sandwich

If you choose to use the crock pot for this recipe. Follow the first step and than combine all ingredients to the crock pot and allow it to cook on low for 8 hours. After the soup cooks for 8 hours you will want to blend it in a blender or food processor to purée. Serve and Enjoy 😉
