Green Beans & Potatoes in Chunky Tomato Sauce



Yields: 8 servings


Ingredients:

  • 1 1/2 tbsp olive oil
  • 1 garlic clove, minced
  • 1 1/2 cup diced red potatoes
  • 1/2 cup chopped celery
  • i 1/4 lb green beans OR 1 bag of steamable green beans
  • 1/4 cup water
  • 3 tomatoes, chopped
  • 1/4 tsp black pepper
  • 1/4 tsp ground red pepper


Preparation:

  1. Heat olive oil in a large skillet over medium0high heat. Add garlic to pan, saute for 30 seconds, stirring consistently.
  2. Add potato, celery, and green beans, saute for about 1 minute
  3. Add 1/4 cup water; cover and cook for 5 minutes or until beans are crisp-tender
  4. Add tomatoes, Cover and cook for four minutes, or until tomatoes begin to soften, stirring occasionally.
  5. Stir in peppers
