Yields: 8 servings
Ingredients:
- 1 1/2 tbsp olive oil
- 1 garlic clove, minced
- 1 1/2 cup diced red potatoes
- 1/2 cup chopped celery
- i 1/4 lb green beans OR 1 bag of steamable green beans
- 1/4 cup water
- 3 tomatoes, chopped
- 1/4 tsp black pepper
- 1/4 tsp ground red pepper
Preparation:
- Heat olive oil in a large skillet over medium0high heat. Add garlic to pan, saute for 30 seconds, stirring consistently.
- Add potato, celery, and green beans, saute for about 1 minute
- Add 1/4 cup water; cover and cook for 5 minutes or until beans are crisp-tender
- Add tomatoes, Cover and cook for four minutes, or until tomatoes begin to soften, stirring occasionally.
- Stir in peppers
