Mediterranean Pasta Salad

I enjoy trying out new recipes that I can enjoy in the Summer. One of my favorite dishes is pasta salad. When it is hot and humid pasta salad is the perfect light dinner. Pasta salad can get boring after awhile with the regular routine dishes.

Prep time: 15 minutes
*Total time: 10 minutes
*Does not count the time to cook the pasta

Ingredients:

12 ounces dry pasta (farfalle)
1 English cucumber, diced
1 pint cherry or grape tomatoes
4 oz. crumbled feta cheese
1/2 red onion
lemon herb vinaigrette

Lemon Herb Vinaigrette Ingredients:

1/4 cup olive oil
3 tbsp red wine vinegar
1 tbsp freshly squeezed lemon juice
2 tbsp dried oregano
1 tsp honey
2 small garlic cloves, minced
1/4 tsp black pepper
1/4 tsp salt
a pinch of red pepper flakes

Directions:

Cook the pasta according to the box in a large pot of salted water
Drain pasta, then rinse under the cold water for about 20-30 seconds or until no longer hot.
Transfer the pasta to a large mixing bowl.
Add cucumber, tomatoes, feta cheese, red onion to the mixing bowl, then drizzle all of the vinaigrette evenly on top. Toss until all of the ingredients are evenly coated with the dressing.
Serve immediately, garnished with extra feta cheese and black pepper if desired.
To make the Lemon Herb Vinaigrette dressing whisk all ingredients together until combined.
