Banana Drop Cookies

This recipe is perfect if you have ripe bananas that need to be used up. The cookies are light, fluffy and picky eater approved.


Ingredients:

  • 1 cup sugar
  • 1 stick of butter
  • 1 tsp vanilla
  • 2 bananas, mashed
  • 1/3 cup egg whites
  • 2 1/4 cups whole wheat flour
  • 2 tsps baking powder
  • 1/4 tsp baking soda
  •  1 tsp cinnamon
For the cinnamon sugar topping
  • 1/4 cup sugar
  • 1/2 tsp cinnamon



Directions:

In a small bowl, combine whole wheat flour, baking powder, baking soda, salt, and 1 teaspoon of cinnamon.
Cream sugar, butter, and vanilla until light and fluffy
Add eggs, and beat well. Stir in the mashed banana
Mix dry ingredients into the wet ingredients. Chill for 30 minutes in the refrigerator.
Preheat oven to 400 degrees
Drop teaspoon sized banana drop balls on to greased cookie sheets.
Sprinkle with cinnamon sugar mixture.
Bake 8-10 minutes or until a toothpick comes clean.
Transfer to a cookie rack and allow to cool.
