Italian Chicken Casserole



A friend of mine was craving chicken casserole and asked if I would make some. Of course I was up for the challenge.




Chicken seasoning:

  • garlic powder
  • Italian seasoning
  • Oregano
  • Lemon pepper
  • Black pepper


Chicken Casserole Ingredients:

  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 cup 2% milk, I used organic milk
  • 1 package of frozen Italian vegetables
  • 1 cup butter
  • 4 cups egg noodles
  • Food Lion Coconut Oil cooking spray
  • 1/2 cup Panko breadcrumbs


Directions:

  1. Spray a cooking sheet with cooking spray
  2. Add chicken tenders to the sheet
  3. Season chicken tenders with the spices listed above.
  4. Bake at 350° til the chicken is cooked
  5. Take out of the oven and allow to cool. After cooling cut the chicken into bite size pieces.
  6. In a bowl combine the milk, butter, both cans of soup, add the egg noodles, and frozen vegetables. Stir to combine.
  7. Spoon all ingredients into the pan
  8. Top with seasonings & sprinkle with breadcrumbs, if desired.
