🍩Baked Donuts🍩



Donuts are kind of like my guilty pleasure 🙊You know what that's like, right? I can't be the only one to enjoy donuts 🍩 or have a guilty pleasure craving. So, to be able to control the caloric intake and make healthier choices I took to Pinterest to see if there was a healthy option that would make this "guilty pleasure" not such a guilty pleasure. This recipe is simple to make and the donuts are quite good. Don't get me wrong they aren't Dunkin' Donuts™ or Krispy Kreme™ but I can definitely deal with these for a healthier option.


Ingredients

  • 3/4 cup flour
  • 2 tbsp cornstarch
  • 1/3 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/3 cup buttermilk*
  • 1 egg
  • 1 tbsp of melted butter
  • 1 tsp vanilla


Topping

  • 3 tbsp butter, melted
  • 1/2 cup sugar + 1 tsp cinnamon, mixed together


*If you do not have buttermilk you can substitute by adding 1 cup of milk with 1 tbsp of vinegar. I used apple cider vinegar for this recipe and it turned out well.



Directions:

  1. Whisk together flour, cornstarch, sugar, baking powder, salt, cinnamon, and nutmeg in a mixing bowl.
  2. In a small bowl, whisk together the buttermilk, egg, melted butter, and vanilla. Add to the dry mixture and stir just til combined.
  3. Spoon the batter using an ice cream scoop into a donut pan that has been coated with cooking spray. Pour the batter in the scoop into six donut wells in the pan.
  4. Bake at 375 for 11-12 minutes. Let cool for a minute and remove to the cooling racks. While still warm, brush both sides with the melted butter and dip into the sugar and cinnamon mixture to coat both sides of the donut. 
  5. Eat & ENJOY while warm
